Scald rice with boiling water and cook in hot water with salt and butter. Peel and core apples and cut into 4 parts. Put apples in a melting-pot pour over water or better wine; add cinnamon, sugar, raisins and lemon zest. If apples are very sweet, add lemon slices or lemon juice. When rice is half cooked, add it to apples. Cook on low heat until done. Combine rice with apples carefully and sprinkle with sugar and cinnamon. This dish must be sweet.

1 c rice.
3 tb butter or fat.
3 ea average apples.
3 tb raisins.
1/2 ts cinnamon.
Salt to taste.
Sugar to taste.
Lemon zest.
Water/ wine.
