Heat a small, heavy-bottomed skillet over medium heat 1 minute. Add combined sugar with water (use 2 tablespoons of the sugar for every 1/2 cup of water) to skillet.
Cook on medium heat until sugar melts and gets golden about 5 minutes. Stirring frequently, add remaining sugar, until sugar is golden.
Reduce heat to low and continue to cook until syrup is amber in color. Use immediately.
