Russian Fries

Russian Fries is the most popular dish in everyday life, as you can’t imagine the Russians without a potato.
For many people, it is as important as bread.

Ingredients for preparation Russian Fries:

  • 6 medium boiling potatoes
  • 4 tablespoons unsalted butter or oil
  • Salt to taste
  • 1 tablespoon finely chopped fresh dill or parsley

Method:

  • Peel and rinse the potatoes, and cut it in half lengthwise.
  • Cut crosswise into scant 1/4-inch slices.
  • Blot them dry with a towel.
  • Melt the butter in 2 large heavy skillets (preferably nonstick).
  • When it bubbles, add the potatoes and spread in a single layer.
  • Saut over moderate heat for 5-6 minutes, or until the slices are golden on the bottom.
  • Take care that the slices do not stick together or to the bottom of the pan, and that the butter does not burn.
  • With a spatula turn the slices and saut for another 4-5 minutes on the other side, then sprinkle lightly with salt.
  • Turn the potatoes again, sprinkle with salt, lower the heat, and combine to cook for about 10 minutes more, or until the slices can be pierced easily with a knife.
  • Sprinkle with the chopped dill and served immediately.
