Bullheads are small canned fish preserved in tomato sauce.
They were produced at the canneries of the Azov and Black seas.
Due to the small size of gobies, thinness and weakness of scales and fins, they are not removed when cutting, and they are invisible in fried fish.
Fried steers were placed in cans in whole carcasses. Tomato sauce should have a pleasant sweet and sour taste.
In addition to tomato paste, it included vegetable oil, fried onions, vinegar, salt, sugar, Bay leaves and other spices. The proportions of fish and tomato sauce in the tin are the same. The normal consistency and good taste of canned food is due to the good absorption of the sauce by fish meat.
Like other canned fish in tomato sauce, gobies are also a semi-finished product for preparing first and second courses: for example, they are used to make fish soup or even borscht.
