This air dried peace of beef round was one of the finest Italian salumi our founder Chef Alec Mikhaylov ever made. He ages it for four months and flavors it with red wine and aromatic juniper berries. It’s great as part of a charcuterie board, but even better on its own as an appetizer, thinly shaved with some Parmigiano Reggiano and arugula.
